300 g lean pork mince
2 spring/green onions, finely sliced
1 tsp crushed garlic
1 tbsp kecap manis
1 egg, lightly beaten
½ cup panko crumbs
2 kg frozen turkey breast roast, thawed
- Preheat oven to 180°C (160°C fan forced). Combine all the ingredients except turkey in a bowl until well combined. Season well with salt and white pepper.
- Remove about half the turkey breast pieces from the foil tray and set aside. Press mince mixture over turkey in the tray. Return all turkey pieces so they cover the filling, pressing down to secure.
- Place turkey in foil tray onto a baking sheet and cover tightly with foil. Bake for 1hr 15 min. Remove foil and bake for a further 30-40 min or until golden brown and the juices run clear when pierced with a skewer. Remove from oven and rest for 10-15 min. Slice and serve with a crisp green salad, roast vegies and a cranberry or sweet and sour style sauce.
