10 cups fresh mixed fruit (green and red grapes, rockmelon, watermelon and blueberries)
1½ cups thickened cream
¼ cup icing sugar mixture
2 teaspoons vanilla essence
2 tablespoons toasted shredded coconut
- Layer fruit varieties into a 10-12 cup capacity glass bowl. Set aside.
- Place cream into a chilled bowl with the icing sugar and vanilla. Using electric beaters, beat the cream mixture until thickened. Fold the coconut through, then spoon cream over the top of the fruit.
- Cover and chill until required. Garnish with extra chopped fruit and toasted shredded coconut, if desired.
