Vanilla & coconut cream fruit trifle
easy - Serves 10 - Vegetarian - gluten-free - nut-free - egg-free - pregnancy-safe

A wonderfully gorgeous trifle of mixed, fresh fruits. Topped with a coconut cream topping.

Ingredients

10 cups fresh mixed fruit (green and red grapes, rockmelon, watermelon and blueberries)

1½ cups thickened cream

¼ cup icing sugar mixture

2 teaspoons vanilla essence

2 tablespoons toasted shredded coconut

Method

  1. Layer fruit varieties into a 10-12 cup capacity glass bowl. Set aside.
  2. Place cream into a chilled bowl with the icing sugar and vanilla. Using electric beaters, beat the cream mixture until thickened. Fold the coconut through, then spoon cream over 
the top of the fruit.
  3. Cover and chill until required. Garnish with extra chopped fruit and toasted shredded coconut, if desired.
