4 zucchinis, quartered lengthways and chopped
400 g grape tomatoes, halved
2 x 400 g butter beans drained and rinsed
½ cup shredded parmesan cheese
6 garlic cloves, finely chopped
- Preheat the oven to 180°C (160°C fan forced). Lightly spray an 8-cup capacity shallow baking dish with cooking spray.
- Place all the ingredients in a bowl with 1 tablespoon olive oil and pepper to taste. Toss to coat.
- Transfer to baking dish and bake, uncovered, for 30-35 min until vegies are just tender or until cooked to your liking. Serve with a generous side salad. Garnish with fresh herbs sprigs.
