Ingredients
440g packet Golden Butter Cake Mix
100g unsalted butter, melted
2 teaspoons grated lemon rind
250g cream cheese, chopped and at room temperature
3 eggs
2 cups pure icing sugar
2 teaspoons grated lemon rind
1/3 cup lemon juice
Method

Prepare a greased 25cm x 18cm baking tin with baking paper.

Place cake mix, butter and lemon rind into a bowl and mix to combine. Press into bottom of baking tin using the back of a large spoon to create a thin and even layer. Bake in 180-degree oven for 15 minutes.

Add cream cheese to the bowl of an electric mixer and mix over medium speed. Add eggs while motor is still running, one egg at a time. Then add icing sugar, one tablespoon at a time, while motor is still running until mixture is fully combined. Add lemon rind and lemon juice and mix at medium speed again.

Pour mixture onto cooked biscuit base. Place in 180-degree oven for 20-25 minutes. Cut into 24 pieces and serve.
