The combination of fresh-tasting ingredients and big flavours make this watermelon and feta salad with pomegranate dressing a winner.
400 g watermelon, seeds removed
200 g feta
200 g radishes, sliced
½ cucumber, diced
1 bunch spring onions, chopped, including green bits
2 tbsp pomegranate molasses
1 good squeeze lemon juice
2 tsp cumin seeds, toasted
4 pitta breads, warmed
- Cut the melon and feta into chunks. Put in a bowl and add the radishes, cucumber and spring onion.
- Whisk the molasses, lemon juice, 2 tbsp olive oil and cumin and drizzle over the salad. Serve with warm pittas for scooping.
