½ medium watermelon
250 g cherries or halved strawberries
125 g blueberries
2 nectarines, cut into wedges
¼ cup finely shredded mint leaves
Honey & Lime Dressing
¼ cup honey
2 tablespoons fresh lime juice
- Turn the watermelon cut side down and slice a piece off the base so the watermelon sits flat when turned the right way up.
- Using a melon baller or spoon, scoop out the flesh to leave a 1cm thickness all around. Turn the hollowed watermelon bowl upside down to drain and set aside. Combine the melon balls with the other fruits and mint in a large bowl. Pour the Honey & Lime Dressing over fruit and toss gently to combine.
- Spoon fruit salad into the watermelon. Garnish with fresh Glacé Lime Slices before serving.
- Whisk together ¼ cup honey and 2 tablespoons fresh lime juice in a bowl.
