Watermelon fruit salad basket

Watermelon fruit salad basket
easy - Serves 8 - Vegetarian - gluten-free - nut-free - dairy-free - egg-free - paleo - pregnancy-safe - raw food

A bowl full of fresh, juicy fruit and topped with a honey-lime sauce. The perfect way to chill out on a hot summer day!

Ingredients

Main

½ medium watermelon

250 g cherries or halved strawberries

125 g blueberries

2 nectarines, cut into 
wedges

¼ cup finely shredded mint leaves

Honey & Lime Dressing

¼ cup honey

2 tablespoons fresh lime juice

Method

  1. Turn the watermelon 
cut side down and slice 
a piece off the base so the watermelon sits flat when turned the right way up.
  2. Using a melon baller or 
spoon, scoop out the flesh to leave a 1cm thickness all around. Turn the hollowed watermelon bowl upside down to drain and set 
aside. Combine the melon balls with the other fruits and mint in a large bowl. Pour the Honey & Lime Dressing over fruit and 
toss gently to combine.
  3. Spoon fruit salad into the watermelon. Garnish with fresh Glacé Lime Slices before serving.
  4. Whisk together ¼ cup honey and 2 tablespoons fresh lime juice in a bowl.
