½ cup caster sugar
4 cups roughly chopped seedless watermelon
juice 2 limes
4 shots Aperol
4 cups crushed ice
mint sprigs, to garnish
Can serve with pictured mint watermelon pops (see linked recipe, below)
- Put sugar and 125ml water in a small saucepan over a medium heat. Bring to the boil and cook until sugar has dissolved. Remove syrup from heat and set aside to cool completely.
- Pour ¼ cup of the syrup into the jug of a blender. Reserve remaining for another use. Add watermelon, lime juice and Aperol then puree until smooth. Add ice and puree again. Pour into a large serving jug. Garnish with mint sprigs and serve with watermelon pops (see linked recipes, below).
