200 g good-quality white chocolate
50 g unsalted cashew nuts
50 g dried cranberries
- Line an oven tray with baking paper. Put chocolate in a heatproof bowl over a saucepan of barely simmering water, stirring occasionally for 4-5 minutes until melted. Do not let the base of the bowl touch the water.
- Spread most of the chocolate into a 30 x 20cm rectangle on the prepared tray. Sprinkle over the nuts and cranberries. Drizzle with the remaining melted chocolate. Leave to harden and break into pieces to serve.
