4 medium potatoes
1 cup melted butter
Salt and pepper
1 tablespoon fresh oregano leaves
Using a mandolin slicer, carefully slice potatoes into fine, wafer-thin slices.
Brush the bottom of a medium-sized round baking tin or dish with melted butter. Carefully arrange potato slices around the bottom of the dish, so they’re slightly overlapping and follow a circular pattern. Keep going until with potato layers until dish is full.
Pour over remaining melted butter and top with a good sprinkle of salt and pepper, and then oregano leaves.
Place in a 190c oven for 1 hour or until very crispy. Serve immediately.
