1 tbsp olive oil
400g diced chorizo
2 x 400g cans rinsed, drained chickpeas
1 finely sliced red onion
1 crushed garlic clove
2 tbsp each chopped flat-leaf parsley coriander and mint
finely grated zest and juice 1 lemon
4 tbsp extra virgin olive oil
Heat 1 tbsp olive oil in a pan. Add 400g diced chorizo and fry for 5 mins until browned. Tip into a bowl with the oil.
Fold in 2 x 400g cans rinsed, drained chickpeas, 1 fi nely sliced red onion, 1 crushed garlic clove, 2 tbsp each chopped fl at-leaf parsley, coriander and mint, fi nely grated zest and juice 1 lemon and 4 tbsp extravirgin olive oil. Season to taste and serve.
