Ingredients
2 tbsp olive oil
3 courgettes, sliced
1⁄2 red chilli, sliced into rings
2 garlic cloves, chopped
handful parsley leaves, chopped
Method

Heat the oil in a frying pan, then fry the courgettes for 4-5 mins until starting to brown. Throw in the chilli and garlic and fry for 1 min more. Season with salt, if you want, then toss in the chopped parsley just before serving
