Ingredients
2 avocados
4 middle bacon rashers, rind removed
4 eggs
4 ciabatta rolls, halved, toasted
8 baby cos lettuce leaves
SMOKY AIOLI
½ cup aioli
1 tsp smoked paprika
Method

To make smoky aioli, combine aioli and paprika in a small bowl. Mix well.

Cut avocados in half. Remove seeds. Scoop flesh into a small bowl. Lightly mash with a fork. Season with salt and pepper.

Heat an oiled, large, non-stick frying pan over a medium heat. Add bacon. Cook for about 4 to 5 minutes on each side, or until crisp. Remove.

Heat same frying pan over a medium to high heat. Add eggs, one at time. Fry for about 2 to 3 minutes, or until cooked to your liking.

To serve, divide avocado among bases of rolls. Top with lettuce, bacon, eggs and aioli. Replace tops.
