Ingredients
500g lean pork mince
1 medium red capsicum, cut into thin strips
6 green spring onions, thinly sliced diagonally
2 tblsps soy sauce
1 tblsps hoisin sauce
2 tsps sambal oelek (chilli paste)
450 packet microwave Jasmine rice
1/2 small fresh pineapple, peeled, halved lengthways, sliced
2 Lebanese cucumbers, thinly sliced
Chilli oil, to serve (optional)
Method

Heat a lightly oiled, large, non-stick frying pan over a high heat. Add pork. Cook, stirring to break up mince for about 7 minutes, or until browned.

Add capsicum and half the onions. Cook, stirring for 1 minute. Stir in combined sauces, sambal oelek and 1 tblsp water. Bring to boil. Remove.

Meanwhile, heat rice according to packet directions.

To serve, divide rice, pork mixture, pineapple, and cucumber among four serving bowls. Scatter over the remaining onions. Serve with chilli oil (optional).
